So, you want to change your diet? You’re vegetarian friend got great results from cutting out meat, and your vegan friends skin has never looked better. But your paleo friend is now lean and looking like a super athlete, and you’re left thinking: I want all of that! How is one to choose? What if you like the concept of eating like our ancestors but dont really have a taste for meat most of the time? What if you dont want to go completely vegetarian, but you like the idea of eating fewer animal products?
Wouldn’t it be so nice not to have to choose? Well now, you don’t!
In my debut cookbook, The Accidental Paleo: Easy Vegetarian Recipes for a Paleo Lifestyle, I’ve compiled my most favorite vegetarian paleo recipes into one user-friendly, something-for-everyone cookbook. As a former pastry chef and meat-eater, I take a carnivore’s approach to plant-based eating. By being mindful of textures, layers of flavor, colors, and nutrition in every concoction, the recipes in this book are designed to satisfy every palate, whether they prefer their meals with or without meat. Everyone has a guac recipe. This one takes my favorite basic guacamole recipe and turns it up a notch. By adding fruit to the mix (not too much), it not only adds color, which is incredibly pleasing to the eyes (and makes your guests think you are the world’s best chef, which, of course, you are, right?), but it’s also incredibly pleasing to the taste buds.INGREDIENTS:
3-4 ripe avocados, halved
Juice of 1 lime
Juice of 1/2 a lemon
2-3 tbsp finely chopped red onion
1 handful of parsley, roughly chopped
1/2 tsp pepper
1/2 tsp sea salt
1 mango, ripe and chopped into chunks
1 ruby red grapefruit, sectioned
4-5 strawberries, small dice
1. Place avocados in a bowl with lemon and lime juice, parsley, salt and pepper. Mash until smooth (or chunky if you prefer chunky).
2. Add mangoes, ruby red grapefruit, and strawberries to the bowl. Stir to combine. Test the seasonings, serve and enjoy!
