Today is National Sandwich Day, so we wanted to arm you with some delicious sandwich recipes to celebrate this special occasion appropriately. If you happen to be vegan, you’re in luck! And, if you aren’t vegan? You’ll still want to follow one of these recipes, too. They’re all delicious—promise!

1. Crispy Cauliflower Sandwich

Cauliflower is an impressively versatile vegetable and, in this sandwich, it comes to life in thick steak form to make this dish incredibly satisfying. The flavor profile—skillet-fried cauliflower topped with garlicky greens and an easy-yet-oh-so-tasty Romesco sauce—is to die for.

2. Tempeh Reuben

This vegan take on a sandwich classic does not disappoint. You’ll find that those beloved Reuben flavors are very much intact, just transformed into a lighter vegan version. Curious what’s in this one? The ingredients list includes toasted rye bread, cashew cheese, marinated pan-fried tempeh, and a cleaned up version of 1000 island dressing. Yes, please!

3. Smashed Chickpea Salad Sandwich

Listen up, chicken or tuna salad fans! This is a great vegan alternative to the sandwich you know and love. Substitute chickpeas for chicken or tuna and use a vegan mayo instead of the traditional version, and you’re all set!

4. Vegan Pulled Pork Sandwich

Are you craving something of the BBQ variety? Then this is the recipe for you. Though most vegan BBQ recipes use jackfruit as the key ingredient, this recipe starts with lentils (meaning the end result contains more protein). This is a recipe you can be certain meat lovers will enjoy, too.

5. Cauliflower Cheddar, Pesto Zucchini Grilled Cheese Sandwich

Many of these words (for example “cheddar,” “pesto,” and “cheese”) aren’t vegan ones, but this sandwich is decidedly meat and dairy-free! The “cheese” is actually made of cauliflower (see recipe #1 in this list for my comment about its versatility). It’s grilled and served warm, making it a pretty ideal fall sandwich recipe, too.
