Sweet Potato Babe Bowl
Do you ever crave that soft, pudding-like texture from acai bowls, but you don’t want something too sugary or fruity? Or are you too busy (or lazy) to blend a nutritionally loaded smoothie bowl, but craving one?
Then organic sweet potato puree may be what your tastebuds ordered.
Why sweet potatoes?
Sweet potatoes are a nutritional powerhouse! They act as an anti-inflammatory and are rich in beta-carotene, B-vitamins, vitamin A, vitamin C, manganese, copper, pantothenic acid, niacin, and phosphorus. They are also a good source for dietary fiber.
If you enjoy the base of your bowl to be mashed, thick and creamy consistency, then a pureed fruit or vegetable is the way to go.

Not in love with sweet potatoes? Try pumpkin or butternut squash puree! Similar consistency and even lower in calories.

Most of my meals are these healthy plant-based “babe” bowls, like this sweet potato puree bowl, because they’re super nutritious and easy on the tummy to make you feel and look like a babe.
Sweet Potato Bowl Recipe:
Open up a BPA-free can of organic sweet potato puree
Make your own puree:
Rinse the sweet potato in cold water and peel skin with a vegetable peeler. Dice into small chunks. Bring water in a medium saucepan to a boil. Reduce heat and add sweet potatoes chunks and cook for 10-15 minutes until tender. Drain sweet potatoes and rice with cold water for 2-3 minutes. Puree sweet potatoes in food processor blend and blend until smooth.
Add puree to bowl
STEP THREE (Optional):
Make it a plant-based protein sweet potato bowl by mixing in 1 Tbsp of nut milk and 1 scoop of your favorite plant-based protein powder.
Decorate sweet potato puree with fruits and healthy fats. Recommendations at least two fruits and one healthy fat:
