(any seasonal greens you like!)
1 bunch of asparagus
1 handful of spinach
1 handful of kale, chopped
1 zucchini, sliced into thin moons
A pinch or two of sea salt
2 Tablespoons of ghee
2-4 cups of vegetable or bone broth (depending on how thick you want soup)
Heat the ghee in a pan. Slice all greens and sauté them for about 8 minutes – start with harder produce, slowly adding softer produce
In a separate soup pot, heat up the broth and then pour the green veggies into the pot to cook fully
Once softened – let cool briefly
Blend with a hand blender or high speed blender until smooth & enjoy!
