Matcha is one of my favorite flavors of the moment, and has many health benefits, so I’ve been adding it to everything! It’s packed with antioxidants, helps detoxify naturally, can calm the mind and relax the body, and is rich in fiber, chlorophyll and vitamins. Plus, it can actually enhance your mood!
This easy-to-make, five ingredient Matcha Nice Cream is one of my go-to’s for a summer treat.
1 ½ TBS Matcha Powder
3 TBS Boiling Water
2 scoops of Vital Proteins Unflavored Collagen Peptides
1 Cup Coconut milk
3 Frozen bananas, sliced
Place the matcha powder and collagen powder into a small bowl and add the boiling water to the matcha and collagen powder, whisk well to combine. Set aside to cool.
Shake the Coconut milk well, then pour 1 cup into a high powered blender, I use the Vitamix A2300.
Add in the frozen banana slices.
Then add the matcha collagen water to the blender, once it’s cooled down.
Blend on high speed for 1-2 minutes or until well combined, you may need to stop the blender and scrape down the sides and reblend, depending on the type of blender you have.
Transfer to a parchment lined bread loaf pan or any deep pan that can be placed in the freezer overnight.
Place in your freezer for at least 4 hours or overnight.
When you’re ready to enjoy, remove from the freezer and let sit a few minutes before scooping, then scoop out and enjoy! I love to top my Matcha Collagen Nice Cream with a few cocao nibs!
